I hope everyone had a great Fourth of July! I know we did!
We drove up the mountain side and had a picnic with my family while we watch pretty much EVERY firework show in the county!
It was David’s first Fourth of July and his first time eating watermelon & fried chicken!
He loved it! He wasn’t supposed to grab the whole piece of chicken; he was supposed to eat the bite sized pieces in my hand, but David does whatever he wants sometimes lol.
It was a really eventful weekend for us because the next day was David’s first birthday party. And guess the ONE thing that I forgot! My camera!
I was totally bummed, but oh well. At least we have the memories…
We had a blast. We had about 30 people show up and served some great food. Burgers & hot dogs were the main dish, but one of the bigger hits was probably the fruit dip I made to go along with some fresh strawberries.
This is probably the easiest recipe in the world and sooo delicious. My mom got it from a friend who does catering.
Marshmallow Cream Cheese Fruit Dip
Ingredients:
- 8 oz cream cheese, softened
- 15 oz marshmallow cream
- 1 tbs powdered sugar (optional)
Directions:
- Mix ingredients with hand mixer until well blended.
- Serve with fruit
Serving size: 2 tablespoons, makes 24 servings
Macros per serving: 3.3 g fat, 14.6 g carbs, .8 g protein
